Apple Hand Pies

These homemade apple hand pies feature a juicy apple pie filling encased in a buttery, flaky pie crust. The yummy taste of a traditional apple pie, but in an adorable, handy size.

Pie Crust
  • 2 1/2 cups all purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1/4 cup butter, cubed and chilled
  • 3/4 cup shortening, chilled
  • 1/2 cup ice water
Apple Pie Filling
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 tbsp flour
  • 2 cups apples, peeled and diced
  • 1 tbsp butter, melted
For Assembly
  • 1 large egg
  • 1 tsp water
  • 1 tbsp coarse sugar (for sprinkling)
Pie Crust
  1. Whisk flour, salt and sugar in a large bowl

  2. Add cubed butter and shortening to the bowl and cut it in until it becomes coarse pea sized crumbles

  3. Add ice water one spoonful at a time using just enough water to make a workable dough

  4. Divide dough into 2 equal portions, wrap the portions in plastic wrap and refrigerate while making the filling

Preparing The Filling
  1. Whisk brown sugar, cinnamon, ground cloves, nutmeg, salt and flour in a medium sized bowl

  2. Add the melted butter and apples - stir to combine

Assembling The Hand Pies
  1. Pre-heat oven to 400F

  2. Line a cookie sheet with parchment paper and set aside

  3. On a floured board, roll out one of the portions of dough to 1/8" thick

  4. Use a 3-4" round biscuit or cookie cutter to cut out 10-12 circles of dough and place them on the prepared baking sheet (the size of your cookie cutter will determine how many circles you can cut)

  5. Top each circle with roughly 1 tbsp of apple pie filling

  6. Roll out the 2nd portion of dough, cut out 10-12 more circles and use a sharp knife to cut slit like vents in them

  7. Place vented circles on top of each hand pie and use a fork to crimp the edges together

  8. Whisk together the egg and 1 tsp of water to make the egg wash

  9. Brush the top of each hand pie with egg wash and sprinkle with coarse sugar

  10. Bake in a 400F oven for 20-25 minutes until golden brown

  11. Cool on wire rack
