Savor the taste of summer with this irresistible treat bursting with juicy blueberries and buttery pastry.


– 1 pint fresh blueberries     approx. 2 cups – ¼ cup granulated     sugar  – 1 ½ teaspoons fresh     lemon juice – 2 T cornstarch


– 1 T butter cut into pieces – 1 egg – 1 T water  – 1 store bought     refrigerated pie crust     (like Pillsbury)

Heat oven to 425 degrees. 

Unroll pie crust and place on a baking sheet.

In a medium sized bowl, toss together the blueberries, cornstarch, sugar and lemon juice.
